Today was the first of an epic five day training at the new jam house. The women of the church in Oussouye started a small business cooperative to make some extra money. An NGO in Dakar has donated tons of really nice equipment to get the business going.
Today the training started with making syrup for bissop juice. We then moved on to habanero pepper sauce.
The training encorporates the very basics, like hand washing to the math involved in measuring and checking ph levels etc. Since some of these ladies do not read, Astude and Florence are there to assist in many of these areas.
Today was an interesting transition from kitchen on the back porch with kids washing their hands in the bucket we are cleaning fruit in, to the environment in the jam house. The women wore caps, gloves and jackets during cooking.
The instruction was done in Wolof so I did not get a ton out of the verbal, I did learn a great deal by watching and participating.
